The other week i decided to make some Oreo cupcakes which aren't very healthy but taste amazing so today i will be sharing with you, how i made them!
Ingredients:
For the cakes:
115g unsalted butter
1/2 tsp vanilla extract
100g self-raising flour
20g cocoa powder
2 large eggs
1sp milk
For the icing:
150g of icing sugar
75g unsalted butter
1-2 packets of Oreos
First in a large bowl mix together your butter and your sugar until it is all combined.
Then add 1/2 tsp of vanilla extract and mix that in as well.
Now sift the flour and cocoa powder into the bowl and mix using an electric whisk.
Now you will want to add two of your eggs and mix.
Once that is all combined add 1 tsp of mil (you may need more or less depending on how dry or wet your mixture is).
In your cupcake tin place 12 cupcake cases and start spooning the mixture in equally.
Once they are all done put them in the oven for around 20 minutes.
Oreo Icing:
Onto the icing, you will need to put your butter and icing sugar and mix until it is all incorporated.
I also add a tiny amount of water so that the icing wasn't as thick.
In a bag smash a handful of Oreo, so they are left in small chunks.
Once they are all broken up, add them to the icing and mix.
To go onto of the icing i also chopped a few Oreos in half.
Once the cakes are cooked and have cooled down you can then add some of the icing on top.
For finishing touches i then added half an Oreo onto each cupcake.
