Festive cupcakes!

The Festive season is the perfect time of the year to get all of your sprinkles and glitter out. This is when you can just make some cupcakes and just go Crazy with decorations.


So that's exactly what i did! if you want to fine out how i made those festive cupcakes, then keep on reading!


Cake mixture ingredients:

- 175g unsalted butter (room temperature)
-3 eggs
- 100ml (room temperature)
-250g caster sugar
-250g self-raising flour
1 teaspoon vanilla extract




Before you do anything you will want to set your oven to 190°/gas 4, this makes sure that the oven is at the correct temperature when you are ready to put the cakes in.



Using these silver paper cases i placed them into a cupcake tin ready for when i have made the mixture.




To start off with, you want to put your butter and sugar in a large mixing bowl and whisk until creamy and smooth.



i then when in with a wooden spoon and gave it one last mix, it the should be looking something like this.



Next you want to add in your eggs and milk and whisk until it is all combined, at this point its not looking its best but don't worry it will look better once the flour is added!



Then you want to sieve in your flour, a bit at a time.



You will want to fold this is using a wooden spoon and once all the flour is added,



you can add the vanilla extract.




Now, you can spoon and equal amount in to each came and they will be ready to bake for about 25 minutes!



when they are golden brown on to and cooked in the middle, you should let them cool for a further 10-20 minutes.



Butter icing:

- 150g marg
- 300g icing sugar

(if you don't want a lot of icing you can always half the amounts!)




While they are cooling, this is the perfect time to make your butter icing! In another bowl i put the marg and icing sugar, then mixed until it was all combined and was looking smooth.




For my icing i wanted to turn it green so i added some green food colouring and once again, mixed this altogether.




I put the icing in just a clear piping bag with a star shaped nozzle.




Now, i attempted to ice the cupcakes, in swirls.





This is the fun part, i then started to decorate using a range of sprinkles and chocolate chips.
